And the Answer to my Question is...


... salt.

Yep. I left the salt out of the risotto. Having realized this, I spinkled on a little kosher salt, added some fresh-ground pepper, and after the dish was out of the microwave, put on some shaved parmesjan.

All the difference in the world!
