Chris's Week Sixteen Recipe: Italian Nachos

The lovely Erica B. came over this evening for the first episode of the new season of Doctor Who and of course I took the opportunity of experimenting on her. (Culinarily! What did you think I meant?!) Nachos sounded good, but I wanted to try a variation, so here are...

Italian Nachos

Saute together:

1/2 medium onion, chopped
2 cloves garlic, minced
1 lb hot Italian pork sausage

In a casserole dish, layer

tortilla chips
sausage mixture
black beans
sliced black olives
mozzarella cheese

If your dish is deep enough, do another layer like the first. Erica & I used different kinds of tortilla chips on each layer.

Bake at 350F for 10 min or until the cheese melts to your liking. Top with diced avocado and your favorite salsa. Trader Joe's peach salsa was a good counterpoint to the Italian sausage.

Would I make this recipe again? Erica approves! We debated whether to add diced green chiles, but decided the hot Italian sausage was spicy enough for us this evening. Erica suggests that diced or even stewed tomatoes would be a good addition.
