Jennifer's Week Twenty-Three Recipe: Enchilada Lasagna

While I was going through Alton Brown recipes for last week's entry, I ran across this one and made the mistake of saying aloud, "'Enchilada Lasagna'?" to which Chad replied with "Make it!" So, I did.


Enchilada Lasagna


For Sauce:

2 dried chipotle chiles, stems and seeds removed, diced

3 large cloves of garlic, minced

2 1/2 teaspoons chili powder

1 1/2 teaspoons cumin seeds, freshly ground (I used already ground cumin.)

2 cups chicken broth (I used a low sodium variety)

3 cups tomato sauce

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground pepper


For Filling:

1 tablespoon vegetable oil

1 pound boneless chicken breasts or thighs, cubed

1 1/2 cups onion, diced

Pinch kosher salt

1 large clove garlic, minced

1 teaspoon dried oregano

12 (6 inch) corn torillas (I may have used 1 or 2 more than this - I didn't count them out)

3 cups shredded queso fresco* or Monterey Jack cheese

Nonstick cooking spray



Combine the chiles, garlic, chili powder, cumin, chicken broth, tomato sauce, salt and pepper in a medium saucepan over high heat. Bring to a boil. Reduce the heat to low and simmer for 15 minutes or until the chiles are soft. Set aside until ready to use.

Preheat the oven to 350 degrees F.

Heat the vegetable oil in a medium skillet over medium-high heat. Saute the chicken until cooked through, approximately 7 to 9 minutes. Remove the chicken from the pan and place in a medium bowl. Add the onions to the same pan along with a generous pinch of salt, decrease the heat to medium-low and sweat for 4 to 6 minutes. Add the garlic and oregano and cook until the onions are tender, 2 to 3 minutes more. Add the chicken back to the pan and remove from the heat.

Spray a 13 by 9-inch glass baking dish with non-stick spray. Place 1/2 cup of the sauce into the bottom of the dish. Dip 4 tortillas into the remaining sauce and lay them into the bottom of the dish. Cut 1 of the tortillas in half to evenly cover the bottom of the dish. Top this with half of the chicken mixture and 1 cup of the cheese. Starting with 4 more tortillas, repeat the layers, ending with the last 4 tortillas on top. Pour remaining sauce over the dish and top with remaining 1 cup of cheese.

Cover with aluminum foil and bake in the oven on the middle rack for 30 minutes. Remove the foil and bake an additional 10 minutes, or until cheese on top is bubbly.

* it should be noted that fresh queso fresco (redundant?) does not shred, it crumbles.


Would I make it again? Erik's reaction: "Mommy, this is awesome!" So, yes. Chad and I have come to the conclusion that Erik really likes Mexican/Tex-Mex food. He seems to always eat it with mucho gusto.

Karin's Week Seventeen Recipe: Kohlrabi Remoulade

This recipe is a result of still having 1/2 of my Giant Kohlrabi leftover from last week's recipe. Two people cannot eat a 3lb kohlrabi in a single sitting.  Looking around for a recipe that had ingredients that I had on hand, I found this by using SimplyRecipes.com. As I had already had on-hand the ingredients for making guacamole, I thought that this might be an interesting recipe to try. Kohlrabi has the flavor of a cross between cabbage and broccoli, with a bit of radish thrown in. It's nice and firm, so once you get it peeled, it's very easy to chop or grate, etc.

Kohlrabi Remoulade

For the remoulade:
2 small-ish, kohlrabi, thickly peeled
2 heaped tablespoons of good quality mayonnaise (see below)
3 fat green olives, pitted and finely chopped
1 small clove of garlic, crushed
Small palmful of hazelnuts, roasted, cooled and chopped
2 teaspoons of grain mustard
Sea salt and pepper

What I did was grate the half kohlrabi I had left on the large holes of a box grater, which made it about 2x the amount called for in the recipe. So I doubled the mayo, garlic, and mustard, and omitted the olives and hazelnuts. Put all ingredients in a bowl and mix thoroughly.

For the guacamole:
2 ripe but firm large Hass avocado
1 small onion, finely chopped
2 tsp minced garlic
1 heaping tsp of sweet chilli sauce
Cayenne pepper, to taste
1.5 tomatoes chopped
juice of 1 ½ lemons

Handful of leaves (arugula, spinach, whatever you like)


Smash the avocados in a small bowl or molcajete*. Add the rest of the ingredients (except the greens) in order to the bowl, mixing thoroughly after each addition. You could also use your own guacamole recipe.


To serve: Place some greens on the plate, top with a mound of guacamole, then a mound of the remoulade.
 

*Using the molcajete always reminds me of visiting Mexico or one of the other Latin American countries. I picked mine up on a trip to Juarez from a small housewares store in the city center - a true molcajete is made of volcanic stone. Now that it is summer, I can use it to make sauces from all kinds of fresh veggies, so you may be seeing more of this nifty device.

Verdict on this was very delicious, and kohlrabi is much better raw than cooked. I think I will be making this again, albeit with a much smaller kohlrabi to start with. Nate's point was, anything that is 50% guacamole has to be delicious. The remoulade gave it more of a salad flair, and we ate it alongside brats on the grill. I think this would make a great summer picnic dish, but I might use a food processor for all the chopping/grating.

Jennifer's Week Thirteen Recipe - Awesome Enchiladas

I was organizing our freezer this morning, also looking for inspiration for dinner, when I discovered we had 2 pounds of chicken breast hidden in the depths of the freezer. Well, I'll something involving chicken for dinner! The question was what. A quick Google search turned up allrecipes.com's list of its Top 25 Chicken Breast recipes. And this was one of them.



Angela's Awesome Enchiladas I have no clue who this Angela is, so I refer to them as simply Awesome Enchiladas

Ingredients

  • 2 pounds skinless, boneless chicken breast meat - cut into chunks
  • 1 (10.75 ounce) can condensed cream of chicken soup (the "healthy request" version)
  • 1 1/4 cups sour cream (low-fat, or light, whatever it is in our fridge!)
  • 1/4 teaspoon chili powder (I think it quadrupled or quintupled this)
  • 1 tablespoon butter
  • 1 small onion, chopped
  • 1 (4 ounce) can chopped green chilies, drained
  • 1 (1.25 ounce) package mild taco seasoning mix
  • 1 bunch green onions, chopped, divided
  • 1 cup water
  • 1 teaspoon lime juice
  • 1/2 teaspoon onion powder (skipped this. 2 other types of onion mentioned above and this seemed like overkill)
  • 1/2 teaspoon garlic powder (doubled this)
  • 5 (12 inch) flour tortillas
  • 3 cups Cheddar cheese, shredded, divided
  • 1 (10 ounce) can enchilada sauce
  • 1 (6 ounce) can sliced black olives

Directions

  1. Place the chicken in a large pot and add water to cover. Bring to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the chicken pieces are no longer pink, about 10 minutes. Shred chicken by placing two forks back to back and pulling meat apart. Set the shredded chicken aside. Meanwhile, combine the cream of chicken soup, sour cream, and chili powder in a saucepan. Bring to a simmer over low heat, stirring occasionally, then turn off the heat and cover to keep warm.
  2. Heat the butter in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the shredded chicken, chopped green chilies, taco seasoning, half of the bunch of chopped green onion, and water. Allow to simmer for 10 minutes. Stir in the lime juice, onion powder, and garlic powder; simmer for an additional 10 minutes.
  3. Preheat an oven to 350 degrees F (175 degrees C). Stir 1 cup of the soup mixture into the skillet with the chicken mixture. Spread the remaining soup mixture on the bottom of a 9x13 inch baking dish.
  4. Fill each tortilla with chicken mixture. Sprinkle Cheddar cheese over the chicken filling before folding the tortillas, reserving half of the shredded cheese for topping the enchiladas. Fold tortillas over the filling and place seam-side down in the prepared pan.
  5. Pour enchilada sauce evenly over the enchiladas. Cover with the remaining 1 1/2 cups of Cheddar cheese. Sprinkle the reserved chopped green onions and the sliced olives on top of the cheese. Bake in the preheated oven until filling is heated through and the cheese is melted and bubbling, about 25 minutes.



Will I make this again? Yes, Chad and Erik both loved it. I did too, however, i had a small problem with calling these beasts enchiladas. They were more like baked burritos smothered in enchilada sauce. Still, they were tasty!
